There's no person with a bigger sweet tooth than me, after every meal I need that little suttin' suttin' to curb that craving. But most sweet snacks are bad for you right? Wrong! I came up with this delicious recipe for cheat-free fruit and nut flapjacks that literally take 15 minutes to bake - result!
You'll need:
250g of porridge oats
Alpro Coconut Milk
Sunflower seeds
Pumpkin seeds
Almond flakes
Raisins
Dates
Honey
Cinnamon
Firstly preheat the oven to 200 degrees, using grease-proof paper line a baking tray. Add the porridge oats to a large mixing bowl and add a few splashes of Alpro Coconut Milk, the oats need to be quite sticky and hold together. Next add in the sunflower and pumpkin seeds, almond flakes, raisins and chopped up dates. Stir the mixture until the seeds and dried fruit are evenly distributed. Drop in two tablespoons of cinnamon then a big squeeze of honey and stir again.
Add the mixture to the baking tray and spread out with the back of a spoon. For an extra little taste squirt honey across the tray in lines from one side to the other. Pop in the oven for around 15 minutes or until the mixture has turned golden brown.
Remove the baking tray and place the grease-proof paper with the mixture on top of a wire rack to cool down. Once the flapjack is cool cut up into pieces and enjoy your perfect after dinner snack!
