HEALTHY EASY MEALS: VEGETARIAN SWEET POTATO AND BEETROOT BURGER


Burgers, who doesn't love them? But when you're clean eating it's sometimes hard to find one that's low in fat and still tastes good. Well not with my sweet potato and beetroot burger! I found this recipe a few years back and have adapted it each time to create the ultimate clean eating, mega healthy, super tasty burger!







Ingredients (makes two burgers):
x1 sweet potato
x1 beetroot 
x2 portbello mushrooms
Egg white
Mixed herbs
Parsley
Tomatoes
Spinach
Salt

Take the beetroot and bring to boil for 10 minutes or until soft, pop a sweet potato in the microwave for the same amount of time. Once they've both cooled down, grate into shreds and add to a large mixing bowl. Sprinkle a pinch of salt, mixed herbs and parsley in and bind together with the egg white. Using your hands take the mixture and split into two patties, using Fry Light oil on a low heat add the patties flipping every 4-7 minutes so both sides cook evenly.

Taking the portobello mushroom carefully slice into two to create the bun. Add the mushrooms to the pan to absorb the juices from the patties. Once cooked through, layer the burgers as you would any other but replace a bread bun for the mushroom. Stack accordingly using spinach and slice tomato as your relish - voila!
